Joseph Profeta, General Manager

Joseph "Joey" Profeta, The General Manager of The Charlotte Palm, has the unique blend of expert culinary, hospitality and management skills. He started his career with the Palm in 1995 as a sous chef in Philadelphia.  Joey added to his skills spending a summer as a sous chef at The James Lane Cafe, a restaurant in the historic inn in East Hampton.  In 1997 Joey moved to The Denver Palm and was then promoted to Executive Chef in 1999.

 

In 2004, Joey took the jump from the back of the house to the front of the house to showcase his hospitality skills as the Assistant General Manager of The Denver Palm.  Quickly showing his prowess for all things Palm he was promoted to his current position as the General Manager of The Charlotte Palm. Since arriving in the Queen City, Joey and his wife Libby have fallen for the charm of Charlotte and are quite happy in their new home.

Joey is a 1995 graduate of the Culinary Institute of America in Hyde Park, NY where he graduated with an A.O.S. degree in culinary arts. Mr. Profeta is currently a member of the American Culinary Federation, a certified Sous Chef and is also "Serve-Safe" Certified through the National Restaurant Association. Other accomplishments include becoming and Eagle Scout and serving as a company-wide trainer of all new Sous Chefs and Executive Chefs for The Palm.

 

 



Colin Johnson, Executive Chef
Executive Chef Colin Johnson took a big step toward fufilling one of his life long dreams when he was promoted to Executive Chef of the Charlotte Palm in 2007.  Colin's hard work and dedication have proven to be one of his biggest assets since joining The Palm in 2002 and working his way up the ranks.  His enthusasism and passion for food is contagious and Colin takes pride in pouring his heart and soul into every Palm dish.  When he is not serving up one of his favorites, Colin enjoyes spending time with his bride to be, Amy.  On any given night, Chef Colin can be spotted in the dining room making our guests feel welcome.


Tonia Heidal, Assistant General Manager

As a native North Carolinian, Tonia Heidal brings an unrivaled sense of southern hospitality to the Charlotte Palm.  With almost twenty years in the business, Tonia brings an abundance of experience and dedication along with her love for great food and wine.  After growing up in Marion, NC and graduating from Western Piedmont Community College, Tonia began her career in restaurants and joined the Palm family as our Administrative Manager in 2004.  She quickly became a corporate trainer and was promoted to Assistant General Manager in 2006.  Tonia's smile and welcoming demeanor can be found daily in our dining room.  In her time away from work, Tonia and her husband, Eric love to spend time with their families, their dogs and taking trips to the beach along the beautiful Carolina coastline.
