Mark Colbath, General Manager
Before joining the Tampa Palm, Mark Colbath was recently the General Manager for Grille 29 of Channelside in downtown Tampa. Originally born out west in Reno/Lake Tahoe, Mark discovered his passion for the restaurant and hospitality industry. Mark spent 10 years in the Hotel/Casino segment which included restaurant and bar operations. This led to a focused career in both culinary and front of house management. Mark developed his line skills in a Steak House known as Jeremiah's. In 1994, Mark moved to Florida to assist a life long friend in the development of his fine dining seafood restaurant in Cedar Key, Florida. First as Chef de Cuisine and later as General Manager, the Island Room was recognized as one of Florida Trends "Top 200" restaurants and has maintained that distinction since 1995. Mark moved on to become the Assistant General Manager and later promoted to General Manager of Wolfgang Puck's Grand Cafe and The Dining Room, in Downtown Disney, Orlando Florida from 2000 to 2003. This allowed him the opportunity to work with and perform numerous dining events with Wolfgang; including the opportunity to travel to L.A. and work at Spago's in Beverly Hills. In 2003 Mark was asked to help complete the build out of the student run restaurant Machon, at the Orlando Culinary Academy, Le Cordon Bleu. In this position Mark developed and instructed the guest services program for their capstone course; additionally Mark taught Wine and Beverage as a 1st level Sommelier, Food and Beverage Cost Control, Hospitality Supervision, and Interpersonal Communication. Mark has a Bachelors of Science in Management, and also his Masters in Business Administration- Professional Management; Mark is also recognized as a Certified Hospitality Educator by the American Hotel and Lodging Educational Institute.

Gabriel Silva, Executive Chef
Executive Chef, Gabriel Silva was born in Montevideo, Uruguay. He moved to south Florida where he attended Florida Culinary Institute in Palm Beach County and graduated at the top of his class in 1992. While in Palm Beach, Chef Gabriel worked as an Executive Sous Chef for 4 and 5 star hotels such as the Palm Beach Gardens Marriott, Sheraton City Place and The Breakers Hotel. Throughout his career, he has had the esteemed honor of cooking for many famous people such as former Presidents George Bush, Sr. and Bill Clinton, as well as Madonna, Bruce Springstein, Sylvester Stallone and Donald Trump. In 1999, Chef Gabriel moved to Little Rock, AR to work for the new Embassy Suites as the Executive Sous Banquet Chef. He had the opportunity to cook for Bill Clinton's state dinner for the Ambassador for Chile. Gabriel was presented with the honorary United States Golden Award by the White House Executive Chef Hans. He also won Taste of Palm Beach two years consecutively. Once Gabriel moved to Tampa, he started working for Yacht Starship, and in 2004, he joined The Palm team as Sous Chef. Chef Gabriel was promoted to Executive Chef in January 2008.
